Vitamin C is also called L- ascorbic acid. It is soluble in water, less soluble in ethanol, insoluble in chloroform, benzene, ether, petroleum ether, oil and other organic solvents, with acidity and reducing, there are four isomers, namely L-ascorbic acid, D-ascorbic acid, L-isoascorbic acid, D-isoascorbic acid.
Fruits and vegetables are rich in vitamin C, the main form of existence is L-ascorbic acid, its strongest efficacy, that is, commonly referred to as ascorbic acid. Under certain conditions, ascorbic acid can be oxidized to produce dehydroascorbic acid, L-dehydroascorbic acid can also be reduced in organisms, into L-ascorbic acid, this change is reversible, so L-dehydroascorbic acid still has biological activity. However, the activity of dehydroascorbic acid disappears when it is further oxidized to diketoglobituric acid, which is irreversible.
